Restaurants are variously recommended for membership by:
Chefs, restaurateurs and culinary professionals belonging to itchefs-GVCI (itchefs-gvci.com)
Melius Admission Committee, or
All Melius member restaurants are signatories to the Melius Manifesto, which is signed by the representative of ownership and/or Chef. The manifesto is an ethical and professional statement of commitment to authentic, high-quality Italian cuisine that respects Italian tradition, health, terroir, and culture.
Restaurants wishing to join Melius are admitted upon an initial evaluation by the Melius Admission Committee and the Melius Director.
