Melius incorporates two Restaurant categories:
The World’s 100 Best Italian Restaurants, outside of Italy, which includes two sections, and The World’s Leading Italian Restaurants outside of Italy.
Melius 100 Best Italian Restaurants In The World
Melius Best 50 Italian fine dining Restaurants in the World,outside of Italy, regardless of geographic location. Each is chosen for its high standard of culinary and hospitality experiences offered to diners.
Melius Best 50 fine dinging Italian Restaurants in the World by Region, these are the best 50 Italian restaurants in the world, outside of Italy, grouped and selected by region. Restaurants are genuinely committed to providing an outstanding fine dining experience.
The restaurants will be selected by the Melius Admission Committee and/or Melius Director because of the commitment to authentic, high quality Italian cuisine and hospitality, which respects Italian tradition, terroirs and culture

Melius World’s 100 Best Italian Restaurants are committed to serving their guests by providing memorable Italian, fine dining experiences and creating an authentic and high-quality culinary journey for them.
Melius provides an independent guarantee of the authenticity and quality of a restaurant and the professionalism, skill, and knowledge of the staff.
Melius “Best” member restaurants agree to abide by this Quality Chart:

The member restaurant has been at least two years in operation with the same name and under the same management/company

It reflects the standard of service which define “fine dining” and which are summarized in the appendix 1

The Restaurants chef is Italian or have had training and / or relevant work experience in Italy, with proven knowledge of the traditions of Italian cuisine and its techniques

The cuisine offered to the guests must be of high quality, clearly recognizable as Italian and reflecting the chef’s personality and experience.

Through food and hospitality, a Melius chef or restaurateur invites the guests on a journey through Italian culinary heritage. Features of desirable culinary experience include:

Traditional recipes with the chef’s personal touch, without the use of ingredients not common to traditional Italian cuisine;

Use of Italian PDO or traditional specialties of Italy;

Consistent quality;

Pleasing presentation appropriate to the style and ambiance of the restaurant;

Dishes served promptly according to guests’ expectations

An Italian-speaking restaurant manager is highly recommended.

A sommelier with in-depth knowledge of Italian wines is strongly recommended.

Menus are written in Italian and according to the traditional formal Italian meal structure – antipasti, primi, secondi and contorni, formaggi, frutta and dolci. The style and format of the menu must match the overall look and feel of the restaurant;

The wine list must be well-structured with a dominant presence of Italian wines and representing the diversity of Italian regional produce.

Interior decor should be tasteful and with a preferable reference to the Italian culture.

If the chef or chef de cuisine is available, he or she meets the guests and thank them for dining at the restaurant. A decree of warm yet discrete interaction between the chef and the customers is highly recommended

Italian Restaurants that are recognized for their professionalism, authenticity, and quality. They are positioned among leading Italian cuisine establishments within their respective geographical areas. The setting of these restaurants is less formal, but food and service are of high quality.
